3 | Feet small hog or sheep casings | |
3 | lb | Rabbit, cubed |
1 | ts | Salt |
1/2 | ts | White pepper |
1/2 | ts | Black pepper |
1/2 | ts | Thyme |
1/2 | ts | Freshly grated ginger |
2 | tb | Chopped fresh chives |
2 | tb | Chopped fresh parsley |
Prepare casings. Combine remaining ingredients; grind through the fine disk, and stuff into casings. Twist off into 3" links. Pan fry in oil.
