Title: Lomo De Puerco Con Cerveza (Pork Loin with Beer)

2 | lb | Pork loin |
1 | ts | Salt |
1/4 | ts | Freshly ground pepper |
1 | lg | Onion, sliced thin |
1 | tb | Shortening |
1 | tb | Sugar |
1 | c | Beer [NOTE: I like a dark |

3 | Fresh pears, pared and cut | |

Sprinkle meat with salt and pepper and let stand while onion cooks in shortening--until transparent, but not brown Remove onion.
Brown pork well in shortening. Put onions back in pan with pork. Dissolve the sugar in the beer and add to the pork.
Simmer for about 45 minutes and then add 3/4 cup water; simmer 20 minutes and add more water if needed.
Simmer a few more minutes until meat is tender; the whole cooking process should take about 1-1/4 hours. About 20-25 minutes before meat is done, place pears carefully on top of meat and allow them to steam through.
Slice meat before serving and arrange it attractively on a platter with the pears.
