8 | Strips bacon cut into small pieces | |
2 | lb | Cooked hominy |
Salt and pepper to taste | ||
3 | Scallions coarsely chopped | |
DIRECTIONS |
Fry the bacon pieces in a large skillet until well browned and crisp. Add the hominy, salt and pepper and cook stirring continuously for 6-7 minutes. Add scallions and continue cooking for an additional 5 minutes. Serve immediately. Serves 6
