A Cajun classic, Corn Maque Choux is a good example of a simple vegetable stepped up in flavor with traditional Cajun ingredients: onion, green pepper, tomato and Tabasco sauce. In a 2-quart saucepan, melt the butter over medium heat. Add the onion and pepper and, stirring frequently, cook for 5 minutes, or until tender. Stir in the corn, tomato, salt and Tabasco sauce. Reduce the heat and simmer for 10 to 15 minutes, or until the corn is tender.
