Title: Mustard Pear Pickles

Yield: 4 Servings
1 | c | Flour, all-purpose |
4 | c | Water |
1 | qt | Vinegar, white |
1 3/4 | c | Sugar |
2 | tb | Salt |
1 | ts | Turmeric |
1 | tb | Celery seeds |
1 | tb | Mustard seeds |
2 | qt | Pears; peeled and chopped |
2 | c | Onion; chopped |
7 | Green peppers; cut into small strips |
Stir together flour and water. Combine flour mixture with next 6 ingredients in a saucepan. Bring to a boil, and simmer 4 minutes, stirring constantly.
Combine pears, onions, and peppers in a large saucepan or Dutch oven. Stir in vinegar mixture; bring to a boil. Cook 4 minutes, stirring constantly.
Spoon mixture into hot sterilized jars, leaving 1/8" headspace. Adjust lids and process 10 minutes in a boiling-water bath.
