2 | qt | Green tomatoes, sliced |
3 | tb | Salt |
2 | c | Vinegar |
2/3 | c | Dark brown sugar |
3 | c | Onions, sliced |
1 | Hot green pepper, chopped | |
1 | c | White sugar |
3 | tb | Mustard seeds |
1/2 | ts | Celery seeds |
1 | ts | Turmeric |
2 | lg | Sweet red peppers, chopped |
Mix tomatoes and salt. Let stand about 12 hours; drain. Heat vinegar, sugars and spices to a boil. Add sliced onions and boil gently for 5 minutes. Add the drained tomatoes and pepper. Bring slowly to a boil. Simmer 5 minutes, stirring occasionally with a wooden spoon. Pack in hot sterlized jars. Be sure the syrup covers vegetables. Seal at once. Process in boiling water at 212 degrees for 5 minutes. Randy Rigg
