Title: Sliced Sweet Potato Pie

4 | | Sweet potatoes (med) |
1 | c | Light brown sugar |
1/2 | ts | Cinnamon |
1/8 | ts | Nutmeg |
1/2 | ts | Ginger |
1/4 | ts | Salt |
6 | tb | Butter or margarine |
1/2 | c | Heavy cream |
Pastry for 2-crust pie. Boil sweet potatoes until half-cooked, 15-20
minutes. Peel and slice thinly. Mix sugar, spices and salt. Place a layer
of sweet potatoes in pastry-lined 9" pie pan, sprinkle with some of the
sugar-spice mixture and dot with a little butter. Continue until all
ingredients are used, dotting top with butter. Add cream. Adjust top crust:
flute edges and cut vents. Bake in hot oven (425 degrees) 30-40 minutes. If
potatoes are still not tender reduce temperture to 350 F. and continue
baking until done. Note: I tried the above baking directions and got a
rather brown crust. When I tried baking it at an initial temp. of 425 F.
for 15 minutes and reducing it to 325 F. afterwards for 45 minutes more, I
got a better crust and the filling was always cooked...
