Title: Dad's Mincemeat (Xmas)

2lbLean beef round stew meat
8cWater
1lbSuet, cut up
12mdCooking apples, pared and
  Cored
3lbSeedless raisins
3cDried currents
1cCandied orange peel, finely
  Diced
4tsSalt
4tsCinnamon
1tsPowdered allspice
1tsGround cloves
2cSugar
2cBrown sugar
1cMolasses
8tsLemon juice
2cApple cider

Boil beef in water. Cover and simmer 2 hours. Remove meat and reserve 4 cups of stock. Put meat, suet, apples through a food chopped. Put in large, 7-8 quart, pan. Add remaining ingredients, except lemon juice and cider. Add reserved stock and simmer uncovered 1 hour, stirring occasionally. Add juices during last 5 minutes of cooking. Pack while hot into sterilized jars. 1 quart will make a 9-inch pie (3 cups) with 1 cup left over for cookies or tarts.
