2 | lb | Lean beef round stew meat |
8 | c | Water |
1 | lb | Suet, cut up |
12 | md | Cooking apples, pared and |

3 | lb | Seedless raisins |
3 | c | Dried currents |
1 | c | Candied orange peel, finely |
Diced | ||
4 | ts | Salt |
4 | ts | Cinnamon |
1 | ts | Powdered allspice |
1 | ts | Ground cloves |
2 | c | Sugar |
2 | c | Brown sugar |
1 | c | Molasses |
8 | ts | Lemon juice |
2 | c | Apple cider |
Boil beef in water. Cover and simmer 2 hours. Remove meat and reserve 4 cups of stock. Put meat, suet, apples through a food chopped. Put in large, 7-8 quart, pan. Add remaining ingredients, except lemon juice and cider. Add reserved stock and simmer uncovered 1 hour, stirring occasionally. Add juices during last 5 minutes of cooking. Pack while hot into sterilized jars. 1 quart will make a 9-inch pie (3 cups) with 1 cup left over for cookies or tarts.
