Title: Sausage Cheese Squares

Yield: 18 Squares
2 | lb | Bulk sausage, hot or mild |
1 | Large chopped onion | |
2 | Minced garlic cloves | |
1/4 | lb | Sliced mushrooms |
1/2 | ts | @ basil, mint and oregano |
1/4 | c | Chopped parsley |
8 | Eggs, egg beaters are OK. | |
1/3 | c | Bread crumbs |
1/4 | c | Grated Parmesan cheese |
4 | c | Shredded Swiss Cheese |
Brown and drain sausage. Mix onions, mushrooms, garlic and herbs in a glass bowl. Sprinkle on 1 Tbsp. water. Cover with plastic wrap and microwave on high for 1 to 2 minutes until onion is soft. Mix with sausage. Beat eggs in large bowl, add bread crumbs, cheeses and sausage mixture. Mix well and pour into lightly oiled 10X15" baking pan. Spread out evenly. Bake at 325F. for 30-35 minutes. Mixture should feel firm in center to touch. Cool and cut into 1" squares. Can also be cut into large squares for main entree.
