12 | Medium onions, ground | |
6 | Sweet red peppers, ground | |
6 | Green peppers, ground | |
6 | Hot peppers, ground | |
2 | tb | Celery seeds |
2 | c | White vinegar (5% acidity) |
2 | c | Prepared mustard |
2 | c | Sugar |
1 | tb | Salt |
Combine all ingredients in a large kettle, mixing well. Bring to a boil; reduce heat, and simmer, uncovered, 30 minutes, stirring occasionally.
Pour hot mixture into hot sterilized jars, leaving 1/4 inch headspace. Remove air bubbles; wipe jar rims. Cover at once with metal lids and screw on bands. Process relish in boiling-water bath 20 minutes.
