Title: Horseradish-Encrusted Salmon

Yield: 4 Servings

4 Salmon filets, about 6-oz ea
1/2cCornbread or corn muffin
  Crumbs
2 Stems fresh thyme, picked
  And minced
  Zest of 1 orange, minced
1tbOr 2 finely grated fresh
  Horseradish
1/2tsSalt
1/2tbMelted butter, plus extra
  For brushing salmon

Heat oven to 475F.

Combine dry ingredients, adjusting amount of horseradish to taste. Stir in butter.

Place salmon on a parchment-lined or lightly oiled baking sheet. Brush with reserved butter and pat 1/4 of crumb mixture on each filet. Bake in center of oven for 8 to 12 minutes. Crust should be lightly browned with salmon just cooked through.
