Title: Horseradish-Encrusted Salmon

4 | Salmon filets, about 6-oz ea | |
1/2 | c | Cornbread or corn muffin |
Crumbs | ||
2 | Stems fresh thyme, picked | |
And minced | ||
Zest of 1 orange, minced | ||
1 | tb | Or 2 finely grated fresh |
Horseradish | ||
1/2 | ts | Salt |
1/2 | tb | Melted butter, plus extra |
For brushing salmon |
Heat oven to 475F.
Combine dry ingredients, adjusting amount of horseradish to taste. Stir in butter.
Place salmon on a parchment-lined or lightly oiled baking sheet. Brush with reserved butter and pat 1/4 of crumb mixture on each filet. Bake in center of oven for 8 to 12 minutes. Crust should be lightly browned with salmon just cooked through.
