Title: Baked Asparagus Patties

1 | tb | Butter or margarine |
1 1/2 | tb | All-purpose flour |
1 | c | Milk |
1 | Egg yolk | |
1/2 | ts | Salt |
Pinch of red pepper | ||
15 | oz | Can asparagus spears, |
Drained and cut into 1/2-in | ||
Pieces | ||
2 | c | Fine dry breadcrumbs |
Melt butter in a heavy sauce pan over low heat; add flour, stirring until smooth. Cook 1 minute, stirring constantly. Combine milk and egg yolk, stirring well; gradually add to flour mixture. Cook over medium heat, stirring constantly, until thickened and bubbly. Stir in salt, pepper, onion juice, and asparagus pieces; chill mixture thoroughly.
Shape into patties, using about 1/4 cup mixture for each. Roll patties in breadcrumbs, and place on an ungreased baking sheet. Bake at 350F. for 20 minutes or until tops are golden brown. Turn and bake an additional 5 minutes.
