Title: Travellin' Meat

Yield: 15 Sandwiches
2 | lb | Leftover chicken, beef, |
Pork, or whatever, ground | ||
2 | c | Mayonnaise |
1 | c | Sweet pickle relish |
2 | Large onions, chopped | |
3 | Large stalks celery, chopped | |
Finely | ||
1 | Small packet sliced almonds | |
2 | tb | Capers |
Grind meat through a coarse food blade. Mix all ingredients together well. Refrigerate overnight.
Make into sandwiches or use as a spread on crackers.
This is the sandwich my mother made back in the late 40's and 50's when we would travel to my grandparents from Northern Indiana (Hartford City) the Southern Illinois (Rosiclare), an eight hour drive in those days. The large brown bag of sandwiches would disappear somewhere between Terre Haute, Indiana and Carmi, Illinois.
This is a great way to get rid of leftover meat. Chicken breasts can be mixed with pork or duck with beef, etc. Try it!
