Title: Wild Rice Cakes

3 | c | Cooked wild rice |
1 1/2 | c | Diced leeks |
1 | tb | Minced garlic |
1 | tb | Butter |
1/2 | c | Cream |
3/4 | c | Corn |
2 | tb | Cilantro |
1 1/2 | ts | Chives |
1/2 | ts | Pepper |
1 | ts | Salt |
1 | Egg | |
1 1/4 | c | Flour |
Cook wild rice according to package directions. Saute leeks and garlic in butter. Mix cream with wild rice, leeks, and remaining ingredients. Using a clean griddle with light oil, spoon 4 ounces of mixture on griddle.
Gently pat 1/2 inch thick 4-5 inch round cake on griddle, brown until firm on both sides.
Try serving with a wild mushroom sauce over Wild Rice Cakes!
