Title: Mincemeat Drop Cookies

1 | c | Margarine or butter |
3 | c | All-purpose flour |
1 | c | Sugar |
2 | Eggs | |
1 | ts | Baking powder |
1/4 | ts | Baking soda |
2 | c | All-Fruit Mincemeat or prepared mincemeat |
1/2 | c | Chopped walnuts or pecans |
Brandy Icing |
In a large mixing bowl, beat the margarine or butter with an electric mixer on medium to high speed about 30 seconds or till softened. Add half the flour to the margarine. Then add the sugar, eggs, baking powder, and baking soda. Beat till thoroughly combined, scraping the sides of the boawl occasionally. Beat in the remaining flour. Stir in the All-Fruit Mincemeat or prepared mincemeat and walnuts or pecans.
Drop dough by rounded teaspoons about 2 inches apart onto greased cookie sheets. Bake in a 350F. oven for 11 to 13 minutes or till lightly browned. Cool on cookie sheet for 1 minute. Remove cookies; cool on wire racks. Drizzle with Brandy Icing. Makes about 72 cookies.
BRANDY ICING: In a small mixing bowl, stir together 2 cups sifted powdered sugar, 1 tablespoon brandy, and enough milk (2 to 3 tablespoons) to make of drizzling consistency.
