Title: Tomato & Avocado Pinwheel Salad

4 | Tomatoes, cut into wedges | |
2 | Avocadoes, peeled & pitted, - cut into thin wedges | |
2 | tb | Lime juice |
SWEET VINAIGRETTE | ||
1/2 | c | Balsamic vinegar |
1 | Garlic clove, minced | |
3 | tb | Onion, grated |
1 | tb | Sweetener |
1/4 | c | Olive oil |
Sprinkle tomato & avocado wedges with lime juice. On a serving platter, arrange laternate slices of tomato & aovcado in a pinwheel fashion.
VINAIGRETTE: Whisk together vinegar, garlic, salt, onion & sweetener. Gradually pour in the oil & whisk to blend. Pour this vinaigrette over the wedges. Serve.
