Title: Low Calorie Zucchini Dressing - Sl 11/86

4 3/4 | c | Zucchini; chopped |
1/2 | c | Plus 2 tbsp onion; chopped |
1/2 | c | Plus 2 tbsp celery; chopped |
1 | c | ;boiling water |
1 | c | Unsalted chicken broth |
2 | Eggs; slightly beaten | |
1 | (8-oz) package herb-seasoned stuffing | |
1 | ts | Poultry seasoning |
1/2 | ts | Butter flavoring |
1/4 | ts | Rubbed sage |
1/8 | ts | Pepper |
Vegetable cooking spray |
Cook zucchini, onion, and celery in 1 cup boiling water 15 minutes; drain well. Mash. Add chicken broth, eggs, stuffing mix, poultry seasoning, flavoring, sage, and pepper; stir well. Spoon mixture into a shallow 2-quart baking dish coated with cooking spray. Bake, uncovered, at 350F for 25 minutes or until heated. Yield: 8 servings. (about 149 calories per 1 cup serving).
