Title: Powter Wilted Cucumber Salad

3 | md | Cucumbers |
1 | sm | Red onion, cut in half and thinly sliced |
3/4 | c | Rice vinegar |
1/8 | ts | White pepper |
1 | tb | Sugar |
Salt and pepper to taste |
Peel and slice cucumbers very thin. Layer cucumbers with salt in a covered container for 1 hour. Pour off accumulated liquid, rinse cucumbers, and drain well. Combine vinegar and remaining ingredients. Pour over cucumbers and onions. Serve with dill or parsley sprinkled on top.
