2 | cl | Garlic, chopped |
1 | Red bell pepper, seeded and diced | |
1/2 | lb | Mushrooms, sliced |
1 | Stalk broccoli (about 1/4 pound) stem peeled, head broken in | |
1/4 | c | Vegetable broth |
2 | md | Zucchini, coarsley shredded |
1 | Yellow squash, coarsley shredded | |
3 | Ripe tomatoes, chopped | |
1/2 | c | Frozen petite corn |
2 | Green onions, chopped | |
2 | tb | Italian parsley |
1 | tb | Fresh basil |
2 | ts | Nature's Seasonings |
1 | ts | Mrs. Dash garlic herb mix |
2 | tb | Lemon juice |
In a large pan place olive oil, garlic, red bell pepper, mushrooms, broccoli and cauliflower. Cook over medium to high heat for 3-5 minutes or until vegetables are just tender. Add vegetable broth. Cook 3 minutes more. Add remaining ingredients and simmer on medium low for 3 minutes more.
