Title: Lyn's Tomato, Basil & Red Pepper Salad

Yield: 2 Servings
1 | Ripe tomato; quartered, | |
;stem section removed, & | ||
;thinly sliced | ||
1 | Sprig basil; leaves removed | |
1 | sm | Red bell pepper; seeds & |
;pith removed, cut in strips | ||
4 | ds | Italian salad dressing |
Quarter tomato and slice. Remove basil leaves from stem (if you remove the under leaves and leave the top ones, repot the stem in some dirt to re-root). Remove seeds & pith from red pepper; slice. Put in container, top with a few slight dashes of prepared Italian Salad dressing...don't drown it. Toss and serve. Makes 2 servings. Can easily be doubled. Source: Lyn's Garden. Note: We had this for dinner tonight with roast chicken, and BOY was it ever good! You know? Simple can often be best. :)
