1 | md | Cucumber |
1 | md | Zucchini; julienned |
1 | md | Carrot; julienned |
1 | md | Onion, red; sliced |
1 | c | Broccoli florets, fresh |
1 | c | Cauliflowerets, fresh |
2 1/4 | oz | Olives, sliced rip; drained optional |
1/2 | c | Oil, olive; or vegetable |
1/4 | c | Vinegar, white wine |
1 | ts | Oregano |
1/2 | ts | Mustard, ground |
1/4 | ts | Garlic powder |
1/4 | ts | ;salt, optional |
1/8 | ts | Pepper |
1/8 | ts | Salt, celery |
In a bowl, combine the vegetables and olives if desired. In a small bowl, whisk oil, vinegar, and seasonings. Pour over vegetables and toss. Chill for 3 hours. Serve in a lettuce-lined bowl with a slotted spoon.
