Title: Celebration Antipasto

1mdCucumber
1mdZucchini; julienned
1mdCarrot; julienned
1mdOnion, red; sliced
1cBroccoli florets, fresh
1cCauliflowerets, fresh
2 1/4ozOlives, sliced rip; drained optional
1/2cOil, olive; or vegetable
1/4cVinegar, white wine
1tsOregano
1/2tsMustard, ground
1/4tsGarlic powder
1/4ts;salt, optional
1/8tsPepper
1/8tsSalt, celery

In a bowl, combine the vegetables and olives if desired. In a small bowl, whisk oil, vinegar, and seasonings. Pour over vegetables and toss. Chill for 3 hours. Serve in a lettuce-lined bowl with a slotted spoon.
