Title: Tomato Herb Dressing

3/4 | c | Canned plum tomatoes with juice (about 2 tomatoes) OR 3/4 cu |
1/4 | c | Fresh lemon juice OR cider vinegar |
2 | Cloves garlic, minced or pressed | |
2 | tb | Chopped scallions, chives or fresh parsley (singly or in com |
1/2 | ts | Salt |
1/4 | ts | Dried thyme or oregano Ground black pepper |
2 | Leaves fresh basil (Optional) Tabasco or other hot pepper s |
Place all of the ingredients in a blender and whirl them until smooth. Store chilled in a covered container. This dressing will keep for about 2 weeks.
Makes 1 cup.
Per 2-ounce serving: 15 calories; 0.7 g protein; 0.1 g fat; 3.6 g carbohydrate; 282 mg sodium; 0 mg cholesterol.
