Title: Treeless Maple Syrup

6 | md | Potatoes |
2 | c | Water |
1 | c | White sugar |
1 | c | Brown sugar |
Peel the potatoes. Boil uncovered with 2 c. water until but 1 c. of fluid remains. Remove the potatoes for use any way you want. Stirring the liquid until the boiling point has again been reached, slowly add the sugar. Once this has entirely dissolved, set thepan off the heat to cool slowly.
See if that first spoonful you doubtfully try doesn't seem to justify your worst suspicions. But bottle the syrup and put it away in a dark place for several days to age. Taste it again at the end of that time and see if you aren't pleasantly amazed.
