Title: Red Onion Compote

2 | Red onions, peeled cut into 1/2" dice | |
1 | tb | Butter |
2 | tb | Sugar |
1/4 | c | Sherry vinegar |
1/8 | ts | Salt |
1/8 | ts | Pepper |
Saut the onions in the butter over medium-high heat for 5 minutes. Add the sugar and cook for 2 minutes, until the onions are lightly caramelized. Add the vinegar, salt, and pepper and cook for 5 minutes more over low heat. Serve warm.
