Title: Fresh Okra & Tomatoes (Microwave)

4 | md | Ripe tomatoes; peeled |
3 | c | Sliced fresh okra |
1/4 | c | Chopped onion |
1/4 | c | Chopped green pepper |
1/2 | c | Water |
1 | ts | Sugar |
1 | ts | Salt |
1/2 | ts | Pepper |
1 | tb | All-purpose flour |
2 | tb | Water |
Puree 2 tomatoes in electric blender or food processor; chop remaining 2 tomatoes. Combine okra, onion, green pepper, and 1/2 cup water in a 2-quart casserole; mix well. Cover with heavy-duty plastic wrap. Microwave at HIGH for 9 to 11 minutes or until okra is done; stirring and turning dish every 3 minutes. Drain and rinse vegetables well, reserving vegetables in dish. Add chopped tomatoes, tomato puree, sugar, salt, and pepper to okra mixture; mix well. Cover casserole with heavy-duty plastic wrap, and microwave at HIGH for 3 minutes. Combine flour and 2 tablespoons water; beating with a wire whisk until flour is dissolved; gradually stir into okra mixture. Cover and microwave HIGH for 1-1/2 to 2-1/2 minutes or until mixture is thickened and bubbly, stirring at 1-minute intervals. Yield: 4 to 6 servings.
