Title: Marinated Sliced Tomatoes

6 | lg | Tomatoes |
1/3 | c | Vegetable oil |
1 | tb | Plus |
1 | ts | Fresh lemon juice |
1/2 | ts | Minced garlic |
1/2 | ts | Salt |
1/2 | ts | Dried oregano; finely rubbed |
2 | tb | Fresh parsley; minced |
Peel and slice tomatoes in fairly thinck slices. Combine and beat together vegetable oil, lemon juice, garlic, salt and oregano. Pour over tomatoes.
Refrigerate covered for several hours until well chilled.
Sprinkle with parsley just before serving.
