Title: Onion - Cheese Pie Sl 4/88

Yield: 1 X 9" pie
2 1/3 | c | Spanish or Vidalia onion; chopped |
1 | tb | Butter or margarine; melted |
3/4 | c | (3 oz) sharp Cheddar cheese; |
Shredded | ||
Cheesy Crumb Crust (below) | ||
3 | Eggs; beaten | |
1 | c | Milk |
1/2 | ts | Italian seasoning |
1/4 | ts | Salt |
1/8 | ts | Pepper |
Onion rings (optional) | ||
Parsley sprigs (optional) | ||
CHEESY CRUMB CRUST | ||
1 3/4 | c | Cheese-flavored cracker crumbs |
1/4 | c | Plus 2 tablespoons butter or margarine; melted |
Saute chopped onion in 1 tablespoon butter until tender; remove from heat. Stir in cheese; spoon into prepared Cheesy Crumb Crust. Combine eggs, milk, and seasonings; stir well. Pour over onion-cheese mixture; bake at 375 degrees F for 25 to 30 minutes or until set. Let stand 10 minutes before serving. If desired, garnish with onion rings and parsley. Yield: one 9-inch pie.
Cheesy Crumb Crust: Combine cracker crumbs and butter; mix well. Press into bottom and up sides of a 9-inch quiche dish or pie-plate; bake at 350 degrees F for 5 minutes. Yield: 1 9-inch pie shell.
