1 | tb | Olive oil |
3 | lg | Onion(s) (abt 2 lb) quartered, thinly sliced |
2 | ts | (to 3 tsp) white wine vinegar |

Heat the oil in a large skillet. Add the onions and cook over medium heat, stirring occasionally, until softened and golden, about 30 min. Add the vinegar with salt and pepper to taste and continue cooking until the onions have a rich, caramel color, 5-10 min more. Keep the onions warm in the skillet or transfer them to an oven-safe dish and set aside. Reheat the onions before serving.
