Title: Couscous with Basil

14 1/2 | oz | Reduced sodium chicken broth |
OR | ||
Vegetable broth | ||
2 | ts | Finely shredded orange peel |
1 | ts | Finely shredded lemon peel |
1 | ts | Finely shredded lime peel |
1 | c | Couscous |
1/2 | c | Chopped dried apricots |
1/4 | c | Chopped and loosely |
Packed FRESH basil |
In medium saucepan, combine broth and orange, lemon and lime peels. Bring to a boil.
Stir in the couscous and apricots. Cover and remove from the heat. Let stand for 5 to 8 minutes or until the liquid is absorbed.
Add basil and toss with a fork.
