Title: Couscous with Basil

Yield: 4 Side dish

14 1/2ozReduced sodium chicken broth
  OR
  Vegetable broth
2tsFinely shredded orange peel
1tsFinely shredded lemon peel
1tsFinely shredded lime peel
1cCouscous
1/2cChopped dried apricots
1/4cChopped and loosely
  Packed FRESH basil

In medium saucepan, combine broth and orange, lemon and lime peels. Bring to a boil.

Stir in the couscous and apricots. Cover and remove from the heat. Let stand for 5 to 8 minutes or until the liquid is absorbed.

Add basil and toss with a fork.
