Title: White on Gold (Squash / Corn) - Ba 10/84

8 | 5-inch-long yellow crookneck squash | |
2 | md | Ears corn (preferably white) |
2 | oz | Mozarella cheese (preferably fresh); coarsely grated |
1 1/4 | ts | Fresh oregano; coarsely chopped |
Salt & freshly ground pepper |
Steam whole squash until just beginning to soften, 5 to 10 minutes. Rinse with cold water and drain. Blanch corn in boiling water 3 minutes. Rinse with cold water and drain.
Cut corn off cobs and measure 1 cup into medium bowl. Gently mix in cheese and oregano using knife tip. Season with salt and pepper if desired. (Can be prepared 1 day ahead and refrigerated.) Halve squash lengthwise and scrape out seeds. Drain shells cut side down on paper towels. Fill squash with corn. Serve at room temperature.
