Title: Eggplant-Walnut Delight

Medium eggplant | ||
Medium onion | ||
1/2 | c | Walnut meats |
Salt, to taste | ||
Oregano, to taste | ||
1/2 | c | Tomato sauce |
Peel eggplant and cut into chunks. Put eggplant, onion, and nut meats through a food grinder or chop in a blender. Add seasonings and tomato sauce and mix thoroughly. Form into a loaf and bake in an oiled casserole for 20 minutes. Serve hot. Stocking Up,Rodale Press,1977 Typos by Mark Miklas
