Title: Sunbeam Potato Pancakes

1 | c | Sifted flour |
2 | ts | Salt |
2 | ts | Baking powder |
1/8 | ts | White pepper |
2 | Eggs; unbeaten | |
1 | c | Milk |
4 | tb | Melted butter or margarine |
2 | tb | Grated onion |
3 | c | Finely grated raw potatoes |
Grate potatoes just before using to prevent discoloration. Combine ingredients in electric mixer bowl. Beat on low speed until blended, scraping bowl.
Preheat frypan to 380 degrees F, grease lightly with butter or drippings. Drop mixture by spoonfuls, spreading out. Bake until browned, about 3 to 4 minutes, turn, brown other side and bake until potatoes are done. Makes about 2 dozen.
