Title: Fried Hominy

Yield: 4 Servings
3 1/2 | c | Cooked hominy (or 1 can) |
1 | Egg, lightly beaten | |
1/2 | ts | Salt |
1/4 | ts | Pepper |
1/2 | ts | Grated onion |
2 | tb | Flour |
1/2 | Stick butter or margarine |
Drain hominy and mix with all ingredients except butter. Shape into 6-8 round, flat patties and fry in butter until golden and crisp. Serves 4-6. Patties may be shaped in squares and cut in triangles.
