Title: Herbed Mashed Sweet Potatoes

2 | lb | Sweet potatoes (About 4 med) |
1 1/2 | tb | Butter |
1 | tb | Low-fat milk |
4 | tb | Snipped chives |
1 1/2 | ts | To 2 tsp minced fresh thyme |

Preheat oven to 400 degree F. Wash sweet potatoes and prick in several places with a fork Place potatoes on a cookie sheet and bake far about 1 hour, or until they feel soft when squeezed. Holding them with a cloth, cut them in half and remove skin. Put flesh into a large bowl and mash well with butter. buyer. Add milk, herbs, salt and pepper.
Transfer to a casserole dish and, if necessary, reheat briefly in the oven or microwave. May be prepared in advance and reheated just before serving. Makes 4-6 servings.
