Title: Powter Confetti Rice

1 | c | Rice |
1 1/2 | c | Water or broth |
1 | ts | Salt |
1 | ts | Garlic powder |
1 | c | Cut carrots, very thin 2 inch long strips |
1/2 | c | Chopped red onion |
1 | c | Cut zucchini, 1/4 inch squares |
1/2 | c | Frozen corn kernals |
1/2 | c | Diced red bell peppers |
1/2 | c | Frozen peas |
2 | tb | Chopped parsley |
1 | tb | Thyme or marjoram |
Place rice, water, salt and garlic powder in a pot with a tight fitting lid. Bring to a boil, then lower heat to simmer. After 10 minutes, add carrots and onion. Steam another 5 minutes, then add remaining veggies.
