Title: Couch Potatoes

Yield: 4 Servings
4 | md | Potatoes (uniform size) |
6 | sl | Bacon |
1/4 | c | Cider vinegar |
1/4 | c | Milk |
Salt & pepper to taste | ||
1/2 | c | Green onions; sliced |
1 | ts | Poppy seeds |
Fresh parsley; chopped | ||
Applesauce and/or sour cream | ||

Preheat oven to 400øF. Wash potatoes and pierce skins with a fork. Bake about 45 minutes, until fork tender. Let cool.
Meanwhile, cut the bacon into l/u-inch pieces and cook in a broad skillet over high heat until crisp. Drain bacon on paper towels. Reserve 1 tablespoon of drippings in the skillet.
Slice off top third of potatoes horizontally. With a melon baller, scoop out the pulp, reserving the skins. Heat bacon drippings and add potato pulp and vinegar. Cook over medium heat until potatoes absorb all the liquid. Remove from heat.
With a potato masher, mash potatoes with milk and season with salt and pepper. Mix in bacon, green onions and poppy seeds. Spoon mixture into the potato skins. Bake 10 minutes until heated through. Garnish with parsley. Serve with applesauce or sour cream on the side, if desired.
