Title: Oatmeal Raisin Cookies - Joann Rachor

1 | c | Honey |
3/4 | c | Water |
2/3 | c | Oil |
1/2 | c | Raisins or carob chips |
1/2 | c | Chopped NUTS OR SEEDS |
1 1/2 | c | Oat flour |
1 | ts | Vanilla |
1 1/2 | ts | Salt |
1 1/4 | ts | Lemon extract |
5 | c | Quick oats |
To make flour BLEND fine 1 1/2 cups oats. Stir together all ingredients except quick oats. Mix in remaining 5 cups quick oats. Let dough sit 10 minutes. To shape, put about 2 tablespoons of dough into palm of hand. Prepare a small bowl of water to dip fingers in as dough is being shaped. Shape dough with moist fingers and place on oiled cookie sheets. Bake at 350F. for 25-30 minutes or until light golden brown. Let cool 5 minutes before removing from sheets. Makes 3 dozen.
