1lbFirm tofu, drained and
  Frozen for at least 24 hrs
1lgStalk celery, diced
1 Scallion, minced
1/2cFat-free mayo, tofu mayo, or
  Soy yogurt
2tbLow-sodium soy sauce
1tbLemon juice
1tsKelp powder (optional)

Thaw tofu and squeeze out moisture. Crumble into small pieces. Add celery & scallions. In a small bowl, mix together mayo, lemon j, and kelp. Add tofu mixture and mix well. Serves 6. Per serving: 136 cal; 11g prot; 6g fat; 8g carb; 0 chol; 426mg sod; 1g fiber; Ovo-Lacto/Vegan
