Title: Sweet & Sour Sauce

1/2 | c | Carrot, sliced |
1/2 | c | Green pepper, coarsely |

3/4 | c | Sugar |
1/2 | c | Ketchup |
1 | tb | Soy sauce |
1/4 | ts | Salt |
15 1/4 | oz | Pineapple chunks, undrained |
3 1/2 | tb | Cornstarch |
1/3 | c | Water |
1/2 | c | White vinegar |
Cook carrot in a small amount of boiling water 2 minutes. Add green pepper; cook 1 minute. Drain; rinse with cold water. Drain; set aside. Combine sugar and next 3 ingredients in a medium saucepan; stir well. Drain pineapple, reserving juice; stir pineapple juice into sugar mixture. Bring to a boil. Combine cornstarch and water, stirring until smooth; add cornstarch mixture and vinegar to juice mixture. Cook over medium heat, stirring constantly, until mixture is thickened and bubbly. Stir in vegetables and pineapple chunks.
