Title: Pear Pork Stir-Fry

15 | oz | Can pear halves or slices |
12 | oz | Lean pork loin, cut into thin slices |
2 | tb | Vegetable oil |
2 | | Carrots, sliced diagonally (about 1 1/2 cups) |
2 | | Stalks celery, sliced diagonally |
1 | md | Onion, sliced |
1/2 | | Green pepper, cut into 1/2" pieces |
3 | tb | Brown sugar, packed |
1 | tb | Cornstarch |
3 | tb | Red wine vinegar |
1 | tb | Soy sauce |
| | Salt to taste |
1/8 | ts | Pepper |
2 | c | Cooked rice |
Drain pears, reserving liquid. Cut each pear half into quarters. Saute pork
in oil until browned. Add vegetables and saute until crisp-tender. Combine
pear liquid with brown sugar, cornstarch, vinegar, soy sauce, salt and
pepper. Add to skillet with pears. Cook and gently stir 1 to 2 minutes or
until sauce is thickened and clear. Serve over rice.
