Title: Eva's Lumpia

2 | tb | Oil |
1 | md | Onion, diced |
1 | Clove garlic, minced | |
1 | lg | Potato, pared and diced |
1 | ts | Salt |
1/2 | c | Carrots, diced |
1/4 | ts | Pepper |
1/2 | c | French cut green beans |
2 | tb | Soy sauce |
1/2 | c | Shredded cabbage |
1/4 | lb | Pork, diced or |
Ground pork or ground | ||
Beef (basically any meat | ||
Will work, even chicken) |
*if you prefer you can add 1/4 lb. shrimp, diced. Also if you like you can put 1/2 cup of bean sprouts
Heat oil, saute garlic and onion. Add pork, saute until fully cooked, drain. Add water, cover and simmer 10 to 15 min. Season with salt, pepper, and soy sauce. Add potato and carrots, saute for 5 min. Add green beans and cabbage (this would be the time to add the shrimp and bean sprouts if you were to use them). Cook stirring 5-10 min. or until vegetables are done. Let cool to room temperature. Wrap filling in Lumpia wrappers. Fry in about 1 inch of hot oil, a couple of minutes on each side, until light golden brown.
I like to cut my wrappers in half if I'm using it as an appetizer. But it is much harder to wrap. If you are still a beginner or the wrapping I suggest leaving it whole or you can also use regular egg roll wrappers since they are much thicker, but it tastes better with Lumpia wrappers. You should be able to find the wrappers in most oriental stores.
