1/4 | ts | Celery salt |
1 | ts | Strong french Mustard |
4 | tb | Wine vinegar |
1/2 | ts | Sugar |
7 | tb | Oil |
2 | tb | Tarragon leaves; chopped |
1 | tb | Lovage leaves * |
1 | tb | Pickled sharp gherkins |
2 | tb | Mushroom cheese ** |
1 | tb | Capers |
2 | Hard boiled yolks | |
4 | tb | Cream |
NB * Lovage is similar to wild celery. Substitute celery leaves. : ** This is a mushroom flavoured processed cheese.
Chop finely the tarragon with the lovage leaves, as well as the gherkins and capers. Push the yolk through a sieve. Mix all together very thoroughly.
