1/4tsCelery salt
1tsStrong french Mustard
4tbWine vinegar
1/2tsSugar
7tbOil
2tbTarragon leaves; chopped
1tbLovage leaves *
1tbPickled sharp gherkins
2tbMushroom cheese **
1tbCapers
2 Hard boiled yolks
4tbCream

NB * Lovage is similar to wild celery. Substitute celery leaves. : ** This is a mushroom flavoured processed cheese.

Chop finely the tarragon with the lovage leaves, as well as the gherkins and capers. Push the yolk through a sieve. Mix all together very thoroughly.
