1 | c | Cut green beans |
1 | c | Peas or lima beans |
1 | c | Sliced carrots |
1/2 | | Head cauliflower, cut into |
| | Flowerets |
| | Boiling water |
1/2 | c | Mushrooms, sliced |
2 | tb | Butter |
2 | tb | Flour |
1 | c | Hot milk |
2 | | Egg yolks,beaten |
1/4 | ts | Salt |
1/4 | ts | Black pepper |
Cook vegetables except mushrooms in small amount of boiling salted water
for 35 minutes (use 1/2 teaspoon salt per quart of water). Drain. Saute
mushrooms in butter. Blend in flour. Brown. Add milk. Cook, stirring, until
thickened. Add a little of hot sauce to egg yolks. Return egg yolks to
remaining sauce. cook. Stirring for 1 minute. Add seasonings. Combine
vegetables and sauce. Mix . serves 8
