Title: Erbsensuppe No.3 (Pea Soup From Dried Peas)

Yield: 1 Recipe

500gDried green or yellow peas
  Some butter
1 Onion
  Some flour
  Salt
  Broth

The evening before cooking: Pick out any bad peas. Wash the peas and soak them over night.

The next morning: Do not remove the soaking water, use it for cooking the peas, boil the peas therein for 60 minutes.

Chop the onion and dust the chopped onion with some flour. Melt the butter in a frying pan and fry the onion until golden-yellow. Add it to the cooked pea soup.

Pass through a sieve and season with salt. Add as much broth as necessary to make a soup. Bring to a boil again, remove from heat and serve.
