Title: James Beards High Rise German Pancakes

3 Eggs
1/2cMilk
1/2cFlour
1/2tsSalt
 pnCinnamon
 pnNutmeg
1 1/2tbSugar
4tbButter, 2 of them melted
2 Tbps icing sugar
  Whipped cream (garnish)
  Fresh berries (garnish)

A recipe James Beard like for his television appearances because there was usually enough time to make these pancakes from scratch, get them in the oven at the beginning of the show, and serve them before the final credits. Their appearance coming out of the oven is nothing short of spectacular - a souffle like demonstration of eggs' lifting power. Beard recalled eating them in Portland when he was a young man, and he suggested they be served not only for special breakfasts, but at brunch, and even as dessert after a light supper (in which case he advised flaming them with rum or cognac). This recipe makes a pancake big enough for two.

Preheat oven to 425F. Beat together the egg and milk. Sift together the flour, salt, sugar and spices. Whisk into the egg/milk mixture and then beat in 2 tbps melted butter. Using a nonstick oven proof skillet, melt remaining 2 tbsp butter. Pour batter into hot skillet and put in oven. Bake for about 15 minutes, then reduce the heat to 375F and continue to bake for another 5-6 minutes until the sides are golden and the center is 'set'. Place pancake onto heated plate. Sprinkle icing sugar over top. For special effects, place paper doilie on pancake, sprinkle sifted icing sugar over and then carefully remove doily. Garnish with whipped cream and serve with fresh berries if desired
