Title: Shrimp Teriyaki

1/2 | c | Soy sauce |
2 | tb | Vegetable oil |
2 | tb | Mirin or sweet vermouth |
2 | tb | Finely chopped green onion |
1 | tb | Brown sugar |
2 | ts | Minced or grated fresh ginger |
1 | ts | Minced or pressed garlic |
| | Black pepper |
1 1/4 | lb | Medium shrimp, peeled and deveined |
1 | sm | Green pepper, cut in 1" pieces |
1/2 | sm | Red onion, cut in 1" pieces |
In a large bowl, combine soy sauce, oil, mirin, green onion, brown sugar,
ginger, garlic and pepper. Add shrimp and stir to coat evenly. Let sit in
refrigerator about 20 minutes. Preheat broiler or charcoal grill. Take
shrimp from marinade and thread on skewers, alternating with green pepper
and onion. Broil or grill skewers about 3" from heat until pink, about 2
minutes. Turn skewers, spoon more marinade over and continue cooking until
shrimp are opaque through, 2 to 3 minutes longer.
