Title: Queen Victoria's Favorite Green Pea Soup - Ntc

Yield: 2 Cups
1 | qt | Fresh or frozen peas |
1/2 | c | Parsley |
1/4 | c | Fresh mint |
1/2 | c | Green onions; chopped |
1 | qt | Beef bouillon |
2 | c | ;water |
2 | tb | Butter or margarine |
1 | ts | Sugar |
Croutons |
In a soup pot combine the peas, parsley, mint, green onions, and bouillon. Cook until the peas are thoroughly tender. You may need to add a little water. Drain the peas, reserving the liquid. Put the peas through a food mill or a blender. Return puree to the broth; reheat. Just before serving, add the butter and sugar. Serve with croutons. Makes 2 cups or 4 servings.
