2 | tb | To 3 tbsp onion; chopped |
Cooking time 10 to 12 minutes.
: Choose 8 rolled cutlets (noisettes) or 4 thin slices of lamb frm the fillet.
: Blend 2/3 cup (1/4 pint, 150 ml) single cream, a pinch of saffron powder or about 10 strands of saffron, 3 teaspoons lemon juice, 3 teaspoons olive oil and 2 to 3 tablespoons finely chopped onion in a large dish. Place the lamb in the marinade, turn over once or twice so the meat absorbs the mixture then cover and leave for several hours.
