Title: Scottish White Pudding (Mealy Pudden)

1lbMedium oatmeal
1/2lbBeef suet (vegetarian if
  Preferred)
2 Onions
  White pepper and salt.

Chop the onions and mix all the ingredients together. Tie up loosely in a scalded cloth, leaving ample room to swell. Boil for 2 hours. Broth or soup may be used instead of water. If steamed in a bowl, allow 3 hours. May be served with meat or by itself. This is very filling and wonderful in winter.
