Title: Smoked Trout Pilaf

Yield: 6 Servings
1 | lb | Hot smoked lake trout |
1 | c | White rice |
2 | c | Chicken broth |
1/2 | c | Butter |
1 | md | Onion; chopped |
1 | cl | Garlic; minced |
2 | tb | Parsley; chopped |
1/4 | c | Saffron; or tumeric |
Pre-heat over to 400. Melt butter in a heavy casserole or baking dish. Saute onion, garlic and safron until transparent. Add rice and stir to coat with butter. Add chicken broth. Bring liquid to a boil. Flake and add fish, stir to mix and cover. Bake in a preheated 400 oven for 30 min.Fluff rice and sprinkle with parsley.
